At the end of each harvest day, the freshly picked coffee cherry is weighed and Pulped, and the first step on the coffee making process, pulping or the Wet Mill Process, begins.

In the Wet Mill Process, the ripe coffee beans are processed through a pulping machine which removes the red skin and then removes the mucilage between the skin and the bean using a machine called a demucer which uses high pressure streams of water.

After Pulping, the coffee is spread on the coffee drying deck where the beans are sun dried for several days and then finish dried in a large tower drier to about 11 percent moisture.
